Quick Hot’n’Sour Mint Chicken

Fresh from my kitchen. Very quick one but the taste would surprise you! Take 200 gm of chicken boneless leg meat cut into small cubes and mix with 0.75 tsp of honey, 1 tsp of paprika powder, 1 tsp of lime juice, 0.75 tsp crushed dried mint leaves, 1 tsp of vegetable oil and salt. Marinate for 30 minutes. Heat up oil in wok and stir fry the chicken with 0.6 tsp of minced ginger, 2.5 tbsp of chopped green chilis, 1.5 tbsp of chopped spring onion and 1 tsp of apple cider vinegar. Adjust salt and sugar and serve hot garnished with some more chopped spring onion.
