Butter Tossed Garlic Prawn

It always feels great to cook something very simple after a complicated experiment in  kitchen. Last week I had a handful of fresh prawns in my kitchen and I had to prepare something really quick. I thought of a typical quick toss dish and the result was nice enough to share with you all. Try this simple one, do improvise and enjoy!

Take 250 gm of medium sized prawns with heads and tails on. Clean and keep dry. In wok, heat up 3 tbsp of butter and 4 tbsp of extra virgin olive oil. Add half cup of finely chopped garlic. Stir fry until brownish and aromatic. Add the prawns followed by 3 tbsp of finely chopped coriander leaves. Stir fry very quickly. Now add 1 tbsp of fresh lime juice followed by salt and sugar. Toss a couple of times and adjust the seasoning if required. Serve hot immediately.
